More ideas:
Magically produce a mouse, have it run around and stop on their card. (maybe have a piece of cheese printed on their card?)
Ask them to draw a card out of the deck, count from the corner that many cards, land on theirs.
(all these are done with the cards face down.)
For the "burn all cards except theirs" one, you could tell them to name a number between 1 and 21. Say they choose 5. Cut the deck, tell them to pick up the card. Repeat that until they have 4 cards. On the fifth card, use the backslip force, and force a card on them. Deal them more cards, until they have 21. Have THEM arrange the cards face up in rows of seven, the turn them face down. (Remember, you know where their card is, because you forced it and saw where they put it.) Now, pick up the cards, starting in the corner, hold them to a lighter. (card tilted like "/", lighter underneath). burn cards. When you get to their's, palm a large coin (half dollar or quarter, or something that size), press it against the back of the card. Since the card is tilted towards you, they can't see this. The coin should absorb the heat and not burn. Then burn the rest of the cards.
Just a rough idea, popped into my head how to do it as I was typing more ideas.
EDIT: Well, I tried burning a card with a quarter behind it... and it still burns.

So that idea is scrapped, unless someone can think of a different way to do it.
